3. DEVELOPMENT AND APPLICATION OF KEY ENABLING TECHNOLOGIES IN LIVESTOCK SYSTEMS AND ANIMAL PRODUCTS

The main objective of this activity is to contribute to the technological development of the livestock and agri-food sector in the EUROACE region, through the development and application of digital technologies in the different stages of the production process (from farm to fork) that facilitate quality control and traceability of processes/products of animal origin and speed up decision-making in real time in situ.

This activity involves actions along the value chain in animal products in the region, based on the application of technologies and sensors that contribute to the modernisation, digitalisation and automation of processes/products. The aim is to increase production efficiency and achieve greater sustainability.

In the dairy sector, the aim is to establish new production and conservation methodologies, especially for the control of salting processes.

In the meat sector, NIR predictive models will be developed for quality control and traceability at key points in the value chain of cured products of interest in the EUROACE, in order to guarantee optimum final quality.
